Select a piece of plate and your butcher grind it (yes, there are people behind the doors - just ring the bell). Ask for a "coarse" grind. Or rather, grind your own with a meat grinder or chop in food processor (cut into 1 - to 1 ½ inch first). One advantage of this is that there are fewer worries about pollution and can safely cook your burgers medium rare, if that's what you want.
We discussed this in another post and I think it is essential to get fresh meat from a butcher here if you want a good hamburger. Make it as easy for you as you can. Find a good butcher and your hamburger will be more than delicious. Make a hamburger the fresh way!
So, go on and make a hamburger with fresh meat everytime.
